I just learned that Registered Nurses constitute the largest healthcare occupation in the U.S. today. There’s literally 2.6 million RN jobs out there! Woah! That explains why I know SO many people in nursing school! My sister-in-law graduates in a week and a half and my cousin will become a nurse next summer. Extra Crispy Strawberry Rhubarb Crisp And Pie – Experimenting is Fun!

It is fruit and berry season again, and the first day of summer vacation for the kids. I’ve just baked my second pie of the week plus a strawberry rhubarb crisp, with the help of four kids – my girls, age 10 and 13 and their boy cousins, age 11 and 14. Baking is a great way to keep kids busy, have them learn some new cooking skills and have them experiment with some new flavors. New for the boys: cardamom. New for all the kids: rhubarb.

(My first pie of the season was a bit of a disaster – my oven broke while the pie was in it baking – no flaky crust there! Just a soggy mess – sooo disappointing.) Oven has been fixed, and I was wanting to erase the bad pie memories with the wonderful smell of fruity baking goodness.

Today’s pie is a strawberry rhubarb pie, which was my dad’s favorite. With Father’s Day coming up next weekend, memories of him are on my mind. We used to grow rhubarb in our backyard growing up and when I saw it at the Farmers Market I knew that was the right pie for this new memory making job.

We made pie dough from scratch – really not hard or too time-consuming when you have a Cuisinart, although it turned out a little sticky for some reason this time. While waiting for the pie crust dough to sit in the refrigerator for an hour, however, we whipped together a slightly different strawberry rhubarb crisp that was really good (and gone before the pie was even come out of the oven, so I guess this new flavor was a winner!)

I’m an artist  – I love to experiment and try new ways of doing things and trying new flavors. Yet another creative outlet for me! My youngest daughter does not like fruit (horrors!), so I make a batch of crisp topping for her separately. This time we made a double batch and discovered that the extra crispy bits were especially good mixed into the regular crisp. Always something new….

Extra Crispy Strawberry Rhubarb Crisp


2 c. rhubarb, cubed into 1/2″ pieces

1 c. sliced strawberries

1/2 c. sugar

3 T.  flour

1/4. cardamom

dash of nutmeg

Combine and pour into a greased 8″ x 8″ baking pan.


1 c. brown sugar

1 c. flour

1 c. old-fashioned rolled oats

1/4 t. ground cardamom

dash of nutmeg

1/2 c. softened butter

Preheat oven to 425 degrees. Combine topping ingredients in bowl or plastic bag and mix thoroughly. Sprinkle half of topping mix over filling. To create the extra crispy topping, pour the remaining topping mix into a separate greased oven-proof pan and bake at the same time as the pan of filling and topping. Remove the crispy topping after about 20-25 minutes (keep an eye on it so it doesn’t burn), and continue baking the filling and topping pan for about 10-15 minutes more, for a total of 35 minutes.

Serve up the crisp filling and sprinkle the extra crispy topping over it, stirring in if desired. The result is a delicious chewy, crispy, sweet, sour mix of flavors and textures.

Strawberry Rhubarb Pie – This Pie Is Really Good!

3 c. rhubarb, in 1/2″ slices

1 1/2 c. sliced strawberries

1 1/4 c. sugar

3 T. tapioca

1/4 t. salt

1/4 t. ground cardamom

1/8 t. ground nutmeg

3/4 t. grated orange peel

Mix above ingredients and let sit for 15 minutes before pouring into unbaked pie crust.

Pastry for two-crust pie

Roll out pie dough and line a 9″ pie pan with one of the crusts. Pour in fruit mixture, cover with top crust and crimp edges. Cut a few slits in the top, sprinkle with a little bit of sugar. (To protect edge of crust from getting too dark while baking, cut length of foil, cut in half length-wise and wrap over crimped edge of pie.) Bake at 400 degrees for 50 minutes, removing foil after 30 minutes if used.

Moms have always encouraged us to behave in ways that protect Mother Earth, whether they were conscious of it or not, and Earth Day 2009 is a great time day to reflect a moment on this. Consider if you will these momisms:

Eat Your Vegetables! – Moms have been trying to get us to go green since the beginning of (my) time. Even Thumper in the movie Bambi (1942) quotes his mother. “”Eating greens is a special treat, It makes long ears and great big feet. But it sure is awful stuff to eat.” I made that last part up myself.” I shop locally at the Farmer’s Market here in Livermore, CA, for my greens and fruits the year round. I eat them, too. And ended up with big feet. 😉

Turn Off The Lights! – What household doesn’t ring with the echo of this familiar refrain of moms trying to save money? Turns out it also helps save the world. I tell my own kids that someday they will be sorry they wasted that energy. I can see their little minds calculating the veracity of such statements.

Medusa Costume with Snake Dress, Snake Hair, Jewelry

Medusa Costume with King Cobra Snake EmbellishmentI love sewing unique Halloween costumes for my girls and this year, I’ve made a Medusa costume that has a 3-dimensional King Cobra appliquéd on the front which wraps around the dress. I created the snake accessories as well, including the etched metal snake earrings, snake necklace and the snake armband. In an exception to my usual preference of making everything, Snake Wrapped Around Dress for Medusa CostumesI bought the Medusa snake headpiece from Bonnie’s Treasures – it’s perfect, and I’m glad I didn’t have to attempt to create snake hair.

Dress: For the dress, we started with olive green silk shantung and lined it in chestnut brown silk satin. We chose Butterick Fast & Easy pattern B4343 which is a close-fitting, off the shoulder gown with a high slit. We found gorgeous fabrics at Britex Fabrics in San Francisco in different textures and colors that worked perfectly for this Halloween costume. I used a ribbed ivory fabric for the snake underbelly and a very fine snake printed knit for the snake body. I dyed faint stripes in the ivory fabric using tea and pomegranate juice. For the snake face, I used red satin and white satin that I fused together to make the open mouth and fangs, a small piece of red Ultrasuede for the forked tongue, and snake eyes that I purchased from Van Dyke’s Taxidermy. I made a short bolero jacket out of a shimmery green crimped knit using McCall’s Fashion Accessories pattern M5197.

Jewelry and Accessories: We found the perfect shoes at Snake Earrings for Medusa CostumeTarget: snake print pumps by Isaac Mizrahi. I created the earrings, necklace and armband in polished gold etched brass with a snake skin pattern and embellished them with Swarovski crystals that I purchased from Dreamtime Creations. (I did a fair amount of searching and found Dreamtime Creations’ selection of shapes, size and colors to be the best, plus the prices and package quantities were great.) Who is Medusa? Medusa is a monster woman from Greek mythology who had snakes for hair. If you gazed upon her you would turn to stone. (My husband’s Halloween costume, naturally, is a man turned to stone: he has spray-painted a whole outfit white, from cap to glasses (leaving tiny holes to see out of) to shoes, and will paint his face white using Halloween face paint from the Halloween Super Store.)

Custom Snake ID Badge HolderHow did Medusa die? She was finally beheaded in her sleep by Perseus who used a mirrored shield to help him direct the fatal blow. From her neck sprang Pegasus (the winged horse) and the giant Chrysaor. Perseus eventually gave the Medusa’s head to Athena who placed it on her shield, the Aegis.

Largest Alien and UFO Convention Sighting in San Jose, CA

Alien Business Card HolderThe biggest UFO convention in the nation is going on today and Sunday in San Jose, CA. The 9th annual Bay Area UFO Expo is being held at the Doubletree Hotel at 2050 Gateway Place in San Jose. Exhibitors and speakers will cover such topics as UFO’s, Implants, Sasquatch, Time Travel, Conspiracies, ET Encounters, Inner Earth and Tesla Technology. Speakers will include Mark Allen, co-owner of, Dr. William Birnes, co-author of the best-selling 1997 book, The Day After Roswell, and actor/entertainer Gary Busey, who often makes comments that are sort of out there.

The airline put them up at a hotel that had an Alien & UFO convention going on at the time. We had a life-sized (for a 3-year-old) inflatable alien around our house for a very long time, and my youngest daughter wanted to be an alien for her very first Halloween, so of course I whipped out an alien costume for her.

TSA Can Now Differentiate Breast Milk From Liquid Explosives

Baby Pram ID Badge HoldersSpeaking of breast-feeding moms and new rules at the TSA (a couple of recent posts), the Transportation Security Administration also has new rules regarding breast milk on airlines. The TSA apparently now has ways to tell the difference between breast milk and liquid explosives.

So now mothers CAN bring more than 3 oz. of breast milk with them, even if not flying with their baby, as long as the milk is declared before screening. Better yet, mothers no longer have to taste the milk to prove it is OK. Whew!

I know breast milk is great for the baby, but the thought of consuming it myself is completely unappetizing (as I’m sure it is to many other mothers). I’m just glad I was never put in that position – I was done nursing by 2000.

But the bottom line is that anything that encourages breast feeding is progress. Maybe those TSA security officers could do their part by promoting their new-found support of nursing mothers by wearing their security badges on a Baby Buggy ID Badge Holder like the one above. This might be the perfect way to advertise the new rules and show support this important public health issue, while putting a friendly, helpful face on this government agency.

If you want to read the exact statements regarding breast milk, here’s what they say on the TSA website:

TSA is also modifying the rules associated with carrying breast milk through security checkpoints. Mothers flying with, and now without, their child will be permitted to bring breast milk in quantities greater than three ounces as long as it is declared for inspection at the security checkpoint.

Breast milk is in the same category as liquid medications. Now, a mother flying without her child will be able to bring breast milk through the checkpoint, provided it is declared prior to screening.

Additionally, they answer these questions:

Q. Why is breast milk not a threat?
A. Breast milk is a medical necessity and it is being classified as such. It must be declared at the checkpoint.

Q. How do you ensure liquid explosives disguised as breast milk or medications are not brought through the checkpoint?
A. Since September 2006, certain liquid medications have been permitted at the checkpoint as long as they are declared to security officers and are subject to additional screening.

Q. Do passengers carrying breast milk need to taste it to prove it is not a liquid explosive?
A. No. We will not ask a traveler to taste breast milk.
